Once we get through this virus I may get a breadproofer as I have found how important a role temperature plays in making this bread.   2. Thank you for the wonderful information! Are you baking your beautiful loaves of bread on a baking steel sheet rather than in a covered pot? Do you use a pan of water for steam while baking?

    1. Thank you for the kind words šŸ˜Š I am indeed baking on a steel with a pan of boiling water underneath. I find that this yields crisper scoring contrast compared to baking in a dutch oven.

    1. Hi and thank you for visiting my blog! I use a medium stainless steel bowl that I bought at a yard sale and fill it halfway. I don’t think it really matters what pan you use, as long as it’s rust-proof.
