  1. Love this post and your generosity in providing your tips both useful and practical. Once we get through this virus I may get a breadproofer as I have found how important a role temperature plays in making this bread. I also love my lame from Wire Monkey with the pretty Bread Journey design on it. Thank you so much and stay well.

  2. Thank you for the wonderful information! Are you baking your beautiful loaves of bread on a baking steel sheet rather than in a covered pot? Do you use a pan of water for steam while baking?

    1. Thank you for the kind words 😊 I am indeed baking on a steel with a pan of boiling water underneath. I find that this yields crisper scoring contrast compared to baking in a dutch oven.

  3. Thank you for sharing all your wonderful bread baking information and techniques. What type of pan and how much water is used under the bread baking steel? I’m definitely considering getting one. I’m enjoying the scoring process. Thank You!

    1. Hi and thank you for visiting my blog! I use a medium stainless steel bowl that I bought at a yard sale and fill it halfway. I don’t think it really matters what pan you use, as long as it’s rust-proof.
